Make your own beautiful and delicious chocolates. A great experience for yourself or as a gift.

You'll be guided  through the whole process in our chocolate studio just outside Winchester by chocolatier, Lee Bolinger. These are hands-on courses where you’ll be doing the making rather than viewing a demonstration. Don't worry if you're a beginner, no prior experience is necessary - just an enthusiasm to get involved. If you already have some experience, we can build on your knowledge and give you some new skills.

All of the chocolate and recipes we will follow are plant based, using no dairy ingredients. During the course we will discuss how this differs from traditional recipes and how this can be easily achieved.

We have two course types available, the first is about creating and decorating chocolates. The second focuses on recipes and skills for creating different fillings for chocolates. Both courses are 4 hours in duration and have a maximum class size of 2 people. You'll take home everything you make, plus a recipe booklet and your own chef's jacket.

Unfortunately we cannot accommodate spectators, so to attend you must be booked onto a course. These courses are intended for adults, due to the working space and complex nature of the courses, the minimum age is 16.

Workshop 1: MINIATURE MASTERPIECES

MINIATURE MASTERPIECES
Working with chocolate & decoration techniques

Difficulty level: MODERATE - no prior experience necessary.
Class size: maximum 2 people
Minimum age 16

  • An introduction to working with chocolate, with a chocolate tasting 
  • Different techniques for tempering and fillings
  • Techniques for mould decoration
  • Decorating dipped chocolates
  • Make your own decorated chocolate bars and figurine
  • Tea, coffee and other drinks provided

Take home: 

  • Over 1kg of chocolate including filled chocolates, bars and a decorated figurine.
  • Recipe booklet including all of the topics covered and your own chef’s jacket to keep.

Workshop 2: FABULOUS FILLINGS

FABULOUS FILLINGS
Plant-based chocolate fillings

Difficulty level: MODERATE - some of what we cover will be quite detailed, but no prior experience necessary.
Class size: maximum 2 people
Minimum age 16

  • An introduction to working with chocolate, with a chocolate tasting 
  • Exploration of ganaches and other fillings 
  • Techniques for converting recipes into delicious plant-based versions
  • Make your own fillings and chocolates – this is a practical session, not just a lecture!
  • Tea, coffee and other drinks provided

Take home: 

  • Everything you make (over 50 filled and decorated chocolates).
  • Recipe booklet including all of the topics covered and your own chef’s jacket to keep.
