Our flavour of the month for September has become a signature creation for us. Rather appropriately, it can be found on the menu at renowned ‘The Elderflower Restaurant’ in Lymington.
KISSING GATE celebrates the changing seasons, as spring elderflowers ripen into elderberries in late summer. We combine foraged elderberries with Buck & Birch’s ‘Aelder - Wild Spiced Elderberry Liqueur’ to create a richly flavoured pâte de fruit.
This is contrasted with dairy-free, white chocolate ganache, flavoured with elderflower and surrounded by a 55% dark chocolate shell.
